Blueberry Protein Pancakes

Delicious classic pancakes that are packed full of protein and fiber!

    Ingredients

    • 55g VitaFiber® IMO syrup
    • 1 1/4 cup protein powder
    • 2 1/4 cup flour
    • 1 1/2 tsp salt
    • 2 tsp baking powder
    • 4 eggs
    • 1 lemon- juiced
    • 1 cup water
    • 1/2 stick butter
    • 2 tsp vanilla
    • 1 cup Greek yogurt

    Directions

    1. Separate egg whites and yolks.
    2. Melt butter in microwave, approximately 20 seconds.
    3. Combine butter, water, yogurt, lemon juice, vanilla, and egg yolks. Mix well. 
    4. In separate bowl, combine dry ingredients: protein powder, flour, salt, and baking powder. Stir. 

    5. In separate bowl, whip egg whites with a whisk to soft peaks. Add VitaFiber® IMO syrup to egg whites. Continue to whisk until stiff peaks. 

    6. Combine all liquid and dry ingredients except egg whites/VitaFiber® IMO syrup. Try not to over mix. Lumpy is okay!

    7. Fold in egg whites/VitaFiber® IMO syrup.

    8. Add blueberries, and griddle pancakes. Add Keto friendly syrup as desired.
