Strawberry Protein Crepes

Eye-catching and delicious. This dessert crepe looks fancy and it's oh-so-easy to make!


Preparation time: 15 mins 
Cooking time: 20 mins
Serving size: 6 crepes


    Ingredients

     

    Strawberry Topping

    • Cut strawberries into slices
    • Add 2 Tbsp VitaFiber® IMO syrup

     

    Protein Yogurt Filling

    • 1/2 cup VitaFiber® IMO syrup
    • 1 cup fat free Greek yogurt 
    • 1/2 tsp salt
    • 1 tsp vanilla extract
    • 2 scoops vanilla protein powder (4 oz)
    • Juice from 1/2 lime
    • 7 tsp Hormel thickening powder

     

    Crepe Batter

    • 1 cup flour
    • 1/2 tsp salt 
    • 3 eggs
    • 1/4 cup water
    • 1 tsp vanilla extract  

    Directions

    1. Prepare 8 inch pan by heating 1/4 tsp coconut oil prior to each crepe.
    2. Pour 1/4 cup crepe batter into prepared pan.
    3. Rotate pan in circles over flame until it stops being runny. Griddle until no longer looks wet.
    4. Flip and cook until golden brown.
    5. Place in layer of wax paper.
    6. Repeat for each crepe.
    7. Place crepe on plate. Add line of filling, add strawberry topping, roll crepe as desired.
    8. Add additional strawberry topping to taste. Can add toasted coconut on top or crushed almonds for crunchy texture. Enjoy!
