Blueberry Protein Muffins
          This recipe makes 6 VitaFiber® IMO Blueberry Protein Muffins.
Ingredients
- 1/4 (45 g) cup VitaFiber® IMO powder
 - 1/4 (35 g) cup pea protein
 - 1 tsp baking powder
 - 2 eggs
 - 1 tbsp. olive oil or coconut oil
 - 1/2 tsp vanilla extract
 - 3 tbsp (30 g) fresh blueberries
 
Method
- Preheat oven at425ºF (220ºC )
 - Combine all ingredients together
 - Pour into muffin pans
 - Bake for for 15-20 minutes until you can stick a toothpick in the centre and nothing sticks
 - Store at room temperature.
